Job Description Grade:

Assist the F&B Leadership team in all aspects supporting the office and strategy function within the division. Continually seek methods to cut costs and grow revenues and create plans to achieve quantifiable goals.

  • Oversee the preparation of weekly and monthly forecast reports, analysis, trends and comparison reports.
  • Prepare projects including but not limited to budgeting, staffing analysis and profitability studies.
  • Utilize a variety of history, pacing, segmentation, and pricing reports to ensure accurate forecasting.
  • Manage expenses for the division.
  • Responsible for special reports for executive meetings, various special projects for upper management and hands-on operation observations and recommendations.
  • Create annual forecast reports and business plans in conjunction with Finance.
  • Assist with administration of InfoGenesis, Spotfire, and Guestbridge
  • Analyze and maintain menu profitability through item cost analysis.
  • Review monthly financial statements.
  • Compare division reports based on volume, revenue, expenses and other information.
  • Establish goals to consistently achieve or exceed forecasts established.
  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
  • Maintain complete knowledge of property management system and manual procedures
  • Assist with the creation of the annual Food & Beverage Budget.
  • Prepare and compare reports: Glass, China, Silver, Stationery, Engineering, Chemical, and Paper Goods.
  • Ensure all recipes are costed prior to implementation.
  • Maintain confidentiality and security of all information, correspondence, reports and files.
  • Monitor daily revenues and covers on the DOR.
  • Monitor Daily mgr comps, large auto gratuities, and comp gratuities.
  • Compile weekly OT explanations for Finance.
  • Review weekly FTE report, compile explanations for variances.
  • Issue weekly FTE report with analysis and business level projections.
  • Track December and Summer staffing results during low occupancy times.
  • Review weekly DOR / Green Bar report for accuracy.
  • Compile and issue top 100 Food Item Cost Report.
  • Monitor daily flash report and notify departments of variances.
  • Provide all add-hoc analysis and financial information as needed.
  • Assist Finance with special projects, budgets, and monthly requests.
  • Compile CERs.
  • Assist with creating daily P&L reports for each outlet
  • Track compliance with corp. beverage brands.
  • Prepare ROIs for revenue enhancements, CAPEX, etc.
  • Create and justify position requests for additional staffing.
  • Process non PO invoices as they come in from vendors.
  • Allocations for support areas, review with VP and distribute.
  • Review comp expenses by dept and reclassify if necessary.
  • Issue and review Preliminary and Final GLs and P&Ls.
  • Answer all Chef/ Mgr questions and issues on GLs and P&Ls.
  • Communicate errors to NGAA/GA for reversals and corrections.
  • Review supply expenses and communicate to Chefs and Mgrs.
  • Hold monthly P&L meetings with all outlet Dept Heads.
  • Perform all other job related duties as requested.
  • Required: 

  • Bachelor’s degree in a related field.
  • At least 1 year of financial planning and project management experience; or equivalent management development program experience.
  • Previous experience working in a similar resort setting.
  • Ability to type 50 wpm and familiarity with fax and copy machine.
  • Working knowledge of Global & Local Cuisine types, styles and offerings.
  • Working knowledge of advanced math skills and ability to create and understand mathematical formulas.
  • Extensive knowledge in Profit & Loss statements and Cost Revenue & Competitive Analysis.
  • Strong knowledge of Restaurant Operations, both front of the house and back of the house.
  • Excellent customer service skills.
  • Able to lead and mentor a team.
  • Have interpersonal skill to deal effectively with all business contacts.
  • Professional appearance and demeanor.
  • Work varied shifts, including weekends and holidays.
  • High school diploma or equivalent.
  • Advanced working knowledge of Microsoft Excel.
  • Working knowledge of Microsoft Outlook and Word.
  • Working knowledge of AS/400, I/P, Infogenisis, Cognos, and Spotfire.
  • Able to effectively communicate in English, in both written and oral forms.       
  • Preferred:

  • At least 5 years of analysis experience.
  • At least 3 years of F&B experience at a major resort.
