Job Description Grade:

It is the primary responsibility of the Assistant Manager Restaurant to manage the restaurant’s operation during shift, supervises service staff, conducts necessary training and provides the best service to the guests and patrons. All duties are to be performed in accordance with departmental and Mirage policies, practices and procedures.

  • Constantly monitor service levels on the dining room floor and adjust staffing as needed.
  • Maintain Food Line Check to consistently ensure ticket times meet Property established standards.
  • Complete paperwork, daily reports and all other necessary financial analysis for the restaurant.
  • Ensure guest satisfaction by approaching every table and making sure guests' dining expectations have been achieved.
  • Order products and supplies for the restaurant.
  • Complete dinner reservations for guests.
  • Conduct daily team update meetings and regular staff training meetings.
  • Manage and lead staff, including: hiring, scheduling, employee counseling and commendations.
  • Manage Human Resource responsibilities to include: hiring/firing, training, issuing discipline and ensure proper documentation of all actions taken.
  • Inter-department collaboration: working in or with other Restaurant Managers as needed to insure success in the Food and Beverage department.
  • Independent decision making, multifaceted in collaboration with our Restaurant Managers and Department Executives.
  • Train all employees on steps of service, sequence of service and hold them accountable to the standards.
  • Ensure daily operational tasks are performed and completed.
  • Ensure equipment is in working order.
  • Ensure areas of the restaurant are constantly maintained for cleanliness.
  • Practice necessary sanitation methods to ensure food safety standards are followed.
  • Communicate via e-mail in a professional manner and follow computer use guidelines.
  • Ensure necessary tools are provided to staff.
  • Ensure adequate staffing levels are maintained and control budgeted labor costs.
  • Ensure departmental and Company policies are followed.
  • Assist Manager in achieving service, financial and Human Resource goals set forth by the Property Executives.
  • Engage, entertain and inspire all who visit the Property by making a focused commitment to L.O.V.E.
  • Perform all other job related duties as requested.
  • Required: 

  • Bachelor’s degree in a related field or equivalent education and experience in Food & Beverage.
  • At least 3 years of high volume restaurant experience with at least 2 years of Assistant Manager or Supervisory restaurant experience.
  • Excellent customer service skills.
  • Able to lead and mentor a team.
  • Have interpersonal skill to deal effectively with all business contacts.
  • Professional appearance and demeanor.
  • Work varied shifts, including weekends and holidays.
  • High school diploma or equivalent.
  • Working knowledge of basic computer skills including Word, Excel, and Outlook.
  • Able to effectively communicate in English, in both written and oral forms.
  • Preferred:

  • Previous experience managing employees using a Collective Bargaining Agreement.
  • Previous experience working in a similar resort setting.
